MS Word. I use MS word to produce all my notes and tests for my classes and have been doing so since 1988.
Excel can be used for transfering data from photosynthesis experiments, enzyme experiments etc and getting the computer to draw graphs.
Ms-powerpoint has more scope however for whole class activity. I use pp to give content and notes and to show animations etc. But I get the students to make out their own pp presentations on a topic. Some examples from the irish curriculum that students have researched and made presentations on are:
elements(chemistry)
solar system (physics)
Particle physics.
osteoporosis
cancer
Infertility (health issues on the biology syllabus)
Hope this is of some help. It depends on the curriculum. There is little time or scope here in ireland for students to do projects or any regular work on the computer.
